Whenever I go out and start up my truck after shes been sitting over night and go to start her up, theres an initial hesitation (lights come on but no cranking). Then she slowly cranks and fires right up. My battery was just replaced in December so Im clueless as to what the issue is. I just took her offroading so my dad thinks that has something to do with it. Any ideas?

I had an 02 that had similar issues but it was sparatic, the largest issue was it starting and having crazy rpm until I revved the engine. It would never do it at the dealership.....of course so I lived with it for a while ended up being my idle sensor. You didn't mention issues with idling but mine started out simple with slow starts, and dimming of the lights. I replaced and charged the battery to no avail then it progressivly got worse and I ended up having it not start for a Tech at the dealership so he changed the idle sensor. Truck ran fine after that.

Hitch and wiring, aux back-up light, rear strobe lights, radio and underseat sub.
Your starter solenoid is the most likely suspect. Check all of your battery cable connections for corrosion and torque, starter included.
Have your charging system tested at autozone too.

Does it click before it finally starts? if so its that starter or starter solinoid. Thats what happened to my truck.

Also as stated before test your battery just in case. Once my battery was fully charged but only have 2.1v in it so there was no way in hell it would start lol
