so my 2.7l just recently started doing this. i thought it may be the clutch sticking but maybe i can get better input.
when i first shift into a higher gear and i have the gas pinned(like 4th or 5th gear) after i let off the clutch about a second later my rpms will quickly jump up as if i was accidentally pressing in the clutch - i'm not going any faster when it does this. but if i let off the gas and slowly throttle in it's fine.
this confuses the heck out of me.

Sounds like your clutch is slipping. How many miles do you have on it? Also with extreme use you can wear it out quickly.

never dealt with a slipping clutch so i wasn't sure what it would be like if it was slipping.
