So, I finally got the double cab back on the road yesterday. Now the front two calipers are locking up. Pedal is VERY firm now too.

I bled the system, but it feels like every press of the pedal makes it worse like a valve isn't allowing the brakes to release.

I am wondering if the airbag deployment locks up something in the ABS system similar to how it locks up the seat belts.

Anyone know for sure? Is there a way to reset it?

Or, do I just bypass the ABS unit as its no good to me with the SAS in the near future anyway?

Sounds like your ABS control module needs to be reset. Bleeding the brakes will not help. Let us know the outcome.
