What symptoms would be caused by bad rack bushings?

Depends on how bad it is.
Everything from just a squeaking noise from the bushing to irregular tire wear, unresponsive steering, a tendency to 'wander' while driving, vibration, etc.

A good indicator would be that 'loose' feeling on center while you're driving.

I have quite the list of symptoms I'm tryin to figure out the cause
1:I have a wobble in the steering wheel of approx 1/2" that gets pretty violent when braking... Back end feels like it's jumping when breaking
2:truck pulls to the shoulder and wanders the road like it wants to steer itself
3: every single bump registers through the steering wheel and sometimes feels like I'm gonna lose control

Rack bushings are a definite possibility. I'd also suggest having them check your front shocks, too. And a tire rebalance might be in order as well.
Honestly, I'd say take it to a garage, have them put it up on the lift, and shake down the entire front end. If it's that bad you might have more than one thing wrong...

    You could have:
    Bad rack bushings
    Bad rack
    Bad inner tie rod ends
    Bad outer tie rod ends
    Bad Lower ball joints
    Bad upper ball joints
    Bad wheel bearings
    Warped rotors.

    You probably have:
Not one of the above, but several of the above.

    Started automatic. Swapped to manual
Rotors, drums, tie rods, ball joints, tire balance. My guess would be rotors, tire balance, front end alignment.

Just had balancing and alignment done in Nov
Havnt done any heavy off roadin since but this winter has been hard on our roads.. Perhaps potholes have thrown off the alignment
I do feel like I'm dealing with more then one issue just hope it's not to pricey
