I've watched some vids on how to test and see if there is a restriction in the exhaust using a vacuum gauge. just wondering if anyone has successfully done this.
And if there's any specifics I need to worry about with our particular setups. If all else fails I'll get a back pressure gauge for the o2 sensors but figured vacuum gauge is cheaper.

I have done the vaccuum test hundreds of times and it works excellent when the catalytic converter is plugged up . If the catalytic converter is partially plugged ,sometimes a vaccuum test will leave you questioning yourself.
With this said ,a vaccuum tester is a cheap tool and should be one of the first tools you grab for when you have engine related concerns . One of the most important steps to using a vaccuum tester is making sure you have it connected to the proper port on the engine for the test you are performing.
I highly recommend owning one .

Speaking of ports, do you know a good one to use off hand for the 3.4l so I don't have to go looking around when I do this?

I beleive any vacuum port on the intake manifold should work for you as long as the port is below or lower than the throttle body

Any suggestions on a specific brand vacuum gauge? I am seeing nothing but mixed reviews on Amazon for all of em...
