Maybe...

Bumped a plug when putting it in, disturbing the gap?
Got anti-sieze or other contaminant on the insulator?
Used a metal gapping tool on iridium plugs (a no-no)?
Insulator cracked when you torqued it? (it happens)
Didn't get a coil connector completely on at reassembly?
Contaminated the coil connector contacts?
Were give and used wrong plugs?
Contaminated the MAF when you cleaned it?

Is the ECU throwing a code?

In my experience, vacuum leaks show up with rough idle.

All I can think of right now and it's probably none of them, but someplace seemingly unrelated to where you worked.

To add, a P0300 is a random misfire code which means it is multiple cylinders misfiring. This will sometimes accompany a P030X code also.

Basically, it starts to shake really bad and I can hear the engine having a bit of a hard time, but when I accelerate, the problem totally goes away.

Once you accelerate and volt soak the coil, it has enough constant juice to jump the broken/wide gap, wherever that might be.

You can fire it up and clamp a timing light on each individual wire for a quick check.

This would work if the Tacoma had a distributor and wires, but it uses individual coil packs on each plug.

I would suspect a bad plug, champions are really not the right choice for this truck, I wouldn't use a champion plug in any engine but that's really just my preference. go with denso or NGK.

I ended up changing my oil, diff fluid, and tranny fluid and it stopped. I have no idea what the problem is.

Exact same thing happened to me. Heres what I did and it worked. Start by pulling one coil pac harness off at a time while the engine is running. My luck it was the first one that I changed the plug on. The engine did NOT slow down. Next I inspected the wires.....Good, then I pulled the coil pac and pulled the new Plug.. Bingo! When the plug fell out of the socket it hit the edge of the cylinder head and closed the gap to zero! I regapped the plug to .041 and she runs like a beotch! Good luck

By pulling the coil pack out while engine is running, couldn't you run the risk of getting severly shocked?
