I finally decide on my tires and now the Nitto Terra Grapplers are back ordered for 2 months. Now what do I do? Should "I settle" for the BFG AT's? I wanted the 265/75 for the little bit larger tire. The bfg's in that size are "E" rated and I don't want to ride around on 4 stiff chunks of rubber. The 265/70 are only "D" rated so they would be a little less stiff. Now what do I do?

Check out Toyo Open Country AT. Same company that makes Nitto. They make Load D and C ranges.

I don't understand how tires with lightning bolts on the sides can be on backorder

I actually have a jeep now. Imagine that.
Sounds like you talked to 4wheelparts. I've tried ordering from them 4 times in the last 2 years... always got the backorder bs. I just ordered from mrwheeldeals or whatever it is. Had what I wanted in stock.
