no plans to drive offroad, but i do drive thru some really deep snow if i get out before the plows in the morning. so far the plan is to run 265/75 but i may look for a skinnier tire for to help drive thru snow.
Once you figure out what range of trie widths you might be running, check the tire manufacturers website. They will list what rims widths each tire size is approved for.

doesn't look good

here is the response from summit racing tech support about the cragar wheels:

They most likely will not fit. From my experience, 16" steel and 1-piece cast wheels won't clear your Toyota's calipers. The best chance for a 16" wheel will be a 2-piece construction, and then I still recommend test fitting before mounting.

17" perhaps

i'm really determined for the 8 spoke old school look. i'll begin my new search for a 17" rim tonight. but i doubt i'll find a 17" steel.

will 4" be enough?

Summit sais the US Wheel 70-7760 will fit. they are 16x7 with a 6x5.5 bolt spacing, and 2 piece construction. the problem is they only have 4" of backspacing. will that be enough to run 265/75 tires with 1.75 inches of lift ? or will there be any rubbing issues ?
