I just noticed today that when I just my truck in gear it makes a clunk like it's getting dropped into gear. Is this normal? You can't check the transmission fluid right? Should I take the truck in to see what it is or am I just being too worried?

It is probably just the transmission taking up the backlash in the drive train and with a 2011 I doubt that the universal joints etc are worn. Unless you have been running through enough water to wash the grease.
