Brand new , just bought it today!
Is there an easy way to remove the rear seats out of an Access Cab?
I am thinking of removing the rear jump seats completely and putting in a smooth deck surface of some type.
    Anybody done this before?

Yeah... quite a few people have done this. search for access + platform and you'll come up with a bunch like this one:

Just finishing up my own version and will take some pics when I get some daylight. The rear armrest and seats come out with just a few bolts each, and the little hatches pop right off. I took all that stuff off to get the platform as low as possible.
