Was wanting to do something with my wheels but can really afford to get new ones at the moment. Was thinking maybe taking out the center caps and maybe plasti dipping them black without the caps. Think it looks ok without the caps but wanting some other opinions!

I would leave the caps on. Without them just look like you lost them.

Interesting question, why does Op's driveway not continue down to the street? But seriously, taking caps off is lowering your trucks re-sale value. The no cap look would only be cool with a group of teenage boys.
