Keep in mind that a tire size change also changes the odometer reading.
If your truck came with 245/70-16 and you go up to a 285/75-16, then down to a 255/50-17 street tire, your calculated MPG and odometer readings will vary as follows over a theoretical 300 miles, with NO actual change in fuel used traveling from point-A to point-B:

245/70-16 - 18 MPG - 300 Miles
285/75-16 - 16 MPG - 270 Miles
255/50-17 - 20 MPG - 330 Miles

It might feel good to see a calculated 20mpg, but the fact remains that you still used 16.67 gallons on a road trip from St George to Salt Lake City.

Now, the smaller street tires are lighter, so there will be some fuel economy improvement from that. They also lower the effective gear ratio. Theoretically, your city MPG will improve, but there will be a loss on the highway.
Driving the 6spd manual with the 255's in 6th will have the engine spinning like the 285's in 5th.

But the only way to know where you are on MPG is to use a GPS when your tire size is changed.

Just drove from my house to superstition mountain With Some camping gear ( lite ) . From my house up to jacumba 116 miles with a 4300 elevation climb along the way for just less than 1/4 tank .

Street tires are 265/75/16 Dungflops (until they wear out then 265/75/16 Dynapros) and I get around 24 MPGs hwy on summer gas. City MPGs are around 20 MPGs.
Trail tires are 255/85/16 BFG KM2s and my MPGs vary from -2 (hilly) to +2 (flat) hwy. City MPGs suck!
Two sets make sense. Better MPGs for most miles & save the better traction tires (& more expensive tires) for off road.

You're probably pretty close to reality (if not comparable to other trucks).

Those tires are 7% over the stock 245's, but if the 4x4 is like my 5-lug, the speedo is off by around 3-5% anyways, which would mean that 265/70s would put it pretty close to accurate.

I hoping to get at least 3mpg back from switching to the other wheels and tires ima start alternating them and run the smaller i the winter and bigger in the summer...probably gonna keep the snaller set on till the SPI meet in july

Speed is of with stock tires but odo is correct.
With 265/75/16s speedo is correct but odo reads less miles than traveled.
I use my GPS info to show correct speed & to figure MPGs.

Sounds right.

Same with my 5-lug and my motorcycle. The odo error is about half the speedo error.

But it's really not that much of a difference percentage wise. A 3% error is only 9 miles every 300.
18mpg becomes either 18.5 or 17.5 on a 3% error.
You're going to vary more than 3% from tank to tank.
