Depends on the state...Each state is different.
In Florida:
790.001 Definitions
(2) “Concealed firearm” means any firearm, as defined in subsection (6), which is carried on or about a person in such a manner as to conceal the firearm from the ordinary sight of another person.
(3)(a) “Concealed weapon” means any dirk, metallic knuckles, slungshot, billie, tear gas gun, chemical weapon or device, or other deadly weapon carried on or about a person in such a manner as to conceal the weapon from the ordinary sight of another person.

Absolutely. However, even if I didn't, I could still carry it in my truck...In florida it just has to be "securely encased" if you don't have a permit.

(17) “Securely encased” means in a glove compartment, whether or not locked; snapped in a holster; in a gun case, whether or not locked; in a zippered gun case; or in a closed box or container which requires a lid or cover to be opened for access.

i used to carry a KABAR fighting knife under my seat with the handle sticking out a little bit and not fully closed in the sheath, I'm sure you could zip tie the sheath to something under there so you can pull the knife out quick if you have to

With a permit I wouldnt worry at all, but without I would be VERY careful what you carry in your truck. An officer with a bad attitude can skew things out of your favor. I am all about being prepared, but also staying out of trouble.

That's my knife! And yep I used velcro :D Stays fully concealed 90% of the time, and when I get out of the truck my body blocks it that other 10% for the most part. I placed it there so if I was ever to be in a wreck I eliminate another hazard from arising, ala knife flying out of sheath on impact and bouncing around everywhere. Not to say mounting anywhere in front of you is bad, but that is just my thought process.

On the topic of knives as a concealed weapon, I read that in GA anything over a 5 inch blade designated for offense or defensive use is considered illegal without a concealed carry license. But I think that is for if you are actually carrying it around. SO I assumed it is ok for me to have it in my vehicle. It is only really for utility purposes, but if self-defense was needed...well. Of course my blade is only 4-7/8:p

looks like Hawaii law is no switchblades, dirks, daggers or butterfly knives. Anything that's sole purpose is to harm a person is illegal to carry concealed.

Other than that I think everything else is OK to carry (don't quote me on that).

I did see a previous court case where a man was arrested on concealed weapons charges because he had a double sided knife. But the case was thrown out because it was a diver's knife and had a purpose other than to hurt someone.

its a well known fact that knives are poor weapons against zombies. Will only piss them off more.
