So what is the best product to use to cover the gap between the bed and tailgate? I haul dirt a lot and I would really like to prevent dirt and rocks from getting stuck down there. Any ideas?

Never really paid attention to how big the gap is but could you use copper pipe insulation. Just cut it to fit and the stuff it in the crack.

I always throw a tarp down when hauling dirt, mulch, etc. Much easier to clean up the bed, period. Should keep most of the crap out of there for you. YMMV
