    You might have better luck looking at an older TT

    Most new ones are just like you described because that's what most people are looking for.

    Maybe a small toy hauler. It has an open floorplan and they tend to be pretty spartan, but they do have a balance issue.
    If you are not hauling bikes/quads, the tongue weight can get pretty high unless you always travel with the water tank empty.

    Get one of these fully aluminum toy haulers. I have one with tip out queen bunks, but this guy fabricated a drop down frame for a huge regular mattress. These trailers are very light, and nice toilet and full shower.
