One of the bolt post that holds down my engine cover has snapped off and I don't know how to extract it or replace it. Any advice anyone?

That sucker is in there good, so I'm not sure if an "easy-out" would work. Basically drill into it reverse threads, then back it out.
Try setting your vice grips so it's pretty much crushing the bolt and see if you can loosen it off but I doubt it will have enough traction.
    Good luck.

That bolt is paet of the molding process. I dont think getting it out and replaced will be to practical.

Go buy some penetrant spray and soak it for a few days before you try to remove it. Then hit it with vise grips.

That is what I was afraid of! The bolt post has a star pattern at its base that looks molded into the surrounding plastic, I don't see any way to get it out without a big engine tear apart activity. Right now I just use a wire tire to keep the cover tight and in place.

I'm digging through the Haynes manual and can't even find it referenced anywhere. I'm tired of the sloppy but effective wire tie look and don't want to bring it to a dealer but may have to for advice/work.

You could grind the remaining stud flat. Drill and tap. Then use a bolt to hold the cover on.

Soak it in penetrating fluid for a few days. Try vice grips. Doubtful you'll get that out.

Why not just leave the cover off?!? Doesn't serve a purpose other than to pretty up the engine bay.

That would work. Be careful not to go to deep and get shavings into the intake. You dont need the cover but it does make everything look nice.

This is probably the approach I'll take if I cannot figure out how to replace the post with an original part

    Yep.
Like others have said, spray it a couple times a day for a few days then try some vice grips... good luck

Worst case scenario; you rotate the insert breaking the bond
it will then come out as one piece
put it in a vice, get the bolt out
bond the insert back in place with some high strength epoxy
put some anti-seize on the new bolt
    all done
