i've been on the hunt for springs for my truck and have managed to come across a local vendor that sells Eibach products. my question is are the springs everybody is using with their 5100's (Toytech Model: 112-620 springs) available from Eibach or are they a Toytech exclusive part?

They are not Toytech exclusive. They can be purchased from many places, including wheelers.

Yeah that's them. also, make sure there's a flat end and round end. There's a similar coil by Eibach that's flat on both ends for adjustable coilovers

maybe it should have been more specific. i keep seeing the Toytech Model: 112-620 springs made by eibach at all of these webpages. i have found a place in town that sells eibach coils but is not a toytech dealer and what i'm wondering if the exact same coils are available from eibach.
as far as i can tell the 112-620 is 620 lb spring but i'm unsure of the length, inner and outer dimensions so it's tough to just pick them out of a 250+ spring part listing. i should also mention the obvious that eibach doesn't list them under the part number 112-620 haha.
any idea of the part number these eibach branded coils might be?

my other option is to just say screw it and go with OME 884 or 885 coils being i'll also be buying a set of dakar leafs to lift the rear. i want to avoid the OME coils as i've been reading here that they aren't exactly a perfect match for the spring rate needed for my 5100's

They are manufactured by Eibach specifically for Toytec making them Toytecs coils. Anyone carrying these bought them from Toytec or an authorized Toytec dealer. Its the same deal with the extended rear 5100, they are made specifically for RCD and therefore need to be purchased by RCD or from an authorized RCD dealer.
