I've found that since my Taco is only an access cab, the volume on my stereo doesn't go very high. Also, when I'm using the AUX function it'll randomly turn off and I'm thinking of getting a touch screen anyway. My question is, if I get an upgrade, will it let me turn the volume louder or will it be the same?

A new head unit will make the speakers sound a lot better. They should go a bit louder but if you want to do it right I would also upgrade the speakers with the head unit for a louder, cleaner sound. These days it doesn't take too much money to make a decent sounding stereo. Almost anything is better than stock Tacoma speakers.

If your near any pick n pulls you can find high end speakers for cheap. I've found Focal Tweaters and a lot of JBL, Kicker, Alpine and many other mids plus amps usually less than $20 each. You'll find plenty of heavy gauge wiring kits as well.

My local pick and pull pretty much strips everything of audio before it hits the yard. Guarantee they have an ebay account selling the stuff.
