Engine Detail: What to cover?

1st Gen 2003 3.4L V6

Going to detail engine in coming days here. Using Chemical Guys Grime Reaper to start. Plan was to lightly wet everything down with hose, generously use degreaser, let is work a bit, brush certain areas etc...rinse. Blow dry, black on black etc...Not the most technical on engine parts, know the basics, learning as I go. Can you guys tell me exactly what parts I need to cover with plastic so they don't get too wet? Thank you. Only reason I haven't done it already is because nervous I'll screw something up...
