Old eggs peel easier. The fresher the eggs, the tougher it is to get the shell off.

Get a pan of water using hot tap water. Put pan on the stove and put the stove on high....put the eggs in the pan immediately. When the water starts boiling, start the timer. I just did a dozen of eggs for about 15 minutes.

At that point, I remove from heat. Using a spoon, I'll put each egg (individually) under really cold tap water for about 30 seconds each.

I think the key is the HOT - to - COLD transfer that helps them crack open easier.

That's how I do it....

what??

here is how you boil and egg to "hard boil". cold water, put the eggs in, turn the stove on high. once the water boils, shut the stove off, and cover the pot. wait 20 minutes. then dump them in a bowl of ice water. your eggs will be perfect. there wont be that grey layer of egg yolk.

crazy to boil water and then add eggs..too many elements of danger.

and yes, really fresh eggs are gonna be difficult to peel. i dont boil my chicken eggs.

Actually adding salt to water increases the boiling point...it lowers the freezing point, hence why it's dumped on roadways.

I use an electric kettle.

Put the eggs in with cold water. Turn on the kettle. The kettle turns itself off when the water boils. I'll let the eggs sit while the water cools down, but at least 20 minutes. Perfectly boiled eggs every time.

The kettle is also great to get quickly boiling water for pasta or rice.
