Hollandaise Sauce

Hollandaise Sauce

3 egg yolks
1/2 lemon, juiced
1 teaspoon cold water
1 teaspoon salt
1 teaspoon ground black pepper
1/2 cup butter

In a small bowl, whisk together egg yolks, lemon juice, cold water, salt and pepper. Melt butter in a saucepan over low heat. Gradually whisk yolk mixture into butter. Continue whisking over low heat for 8 minutes, or until sauce is thickened. Serve immediately.


Now go make some eggs benny

BASIC HOLLANDAISE SAUCE

½ cup butter
4 egg yolks, well beaten
2 to 2½ tablespoons lemon juice
Pinch of white pepper
1/8 tsp salt

Melt 2 tablespoons butter in the top of a double boiler, then pour gradually into the beaten egg yolks, stirring constantly. Return yolks to pan and place pan in or over hot water. Add the remaining butter by tablespoons; stir after each tablespoon until each is melted. Remove from the heat and stir in lemon juice, pepper and salt.

BLENDER HOLLANDAISE SAUCE (EASY!!!!!!)

1 egg
3 tablespoons lemon juice
¼ tsp salt
1/8 tsp white pepper
½ cup butter

Combine egg, lemon juice and seasonings in blender container. Melt butter in small saucepan over medium heat until bubbling. Blend egg mixture in container until well mixed. Add bubbling butter gradually, blending until thickened and smooth. This makes approximately ¾ cup sauce.

A local cafe has a "Redneck" version of Eggs Benny called "Cooter's Country Benedict" Split a buttermilk biscuit, put a sausage patty on top of each half, set scrambled eggs on top of sausage & cover in country gravy(white).

Yeah...I had the water boiling and the vinegar- and they still spread out like mo-fo's. I was only my second time making them tho...so i'll keep trying.
