Grilled Cornish Hen

Simple, cheap, and delicious.

Everything you want in your woman and your dinner.

Here goes...

Plan on 1 Cornish hen per every 2 ppl. Half per person. If your real hungry or are a big boy, A whole one would be no problem to eat yourself.

First take out the bag of guts. VERY IMPORTANT.

Then cut down both sides of the back bone and cut the spine out and throw it away. Or keep it for chicken stock later or soup bones or whatever.

next, Break the breast bone so your hen can sort of lay flat. You dont want any curve to it. You want as much of the skin to touch the grill as possible.

Next, mix up 2 tbs salt, 1 tbs black pepper, 1 tbs smoked paprika (regular will work too), 1/2 tbs garlic powder, and if you have it 1/2 tbs of thyme. I never have it so i just omit it.

sprinkle/rub this over the skin on the Hen and then turn over and sprinkle it on the underside. Coat it real good. Let this marinade for at least 2 hours.

Get your grill nice and hot. Start off with the skin side down. Cook on high/med high for 15 mins or so. We want the skin to have a nice crisp blackened look. Flip over and do 10-15 minutes on the other side.

KEY HERE is not to overcook. It will dry out fast if you overcook. Last thing, Once you take it off the grill, Lay it on a plate or dish or whatever and cover tightly with foil for 10 mins or so. Let the juices finish baking the hen. I hardly ever get to do that last step, im always dying to eat by then, but it does make a difference.

There ya go. 2 hens are about 5 bucks. $15 gets you 6 hens. That will feed about 10 ppl or so. Nice cheap dish to make at your next party/reunion whatever.
