Another comfort food special from my kitchen. I found this recipe in an old cook book from the 60's and it has become a family favorite. It's called "company chicken". Chicken breasts dipped in melted butter then breaded with a mixture of breadcrumbs, parmesan cheese, S+P and garlic(I like mine with LOTS of garlic) then more melted butter on top and baked in a nice hot oven....

That is definitely a big pizza. I dont know how that would fit in an automatic pizza oven. It would have to go in an actual oven. Those ovens are horrible in kitchens especially in the summer. They produce so much heat and it effects the temp of the kitchen. The automatic ovens are usually set up under a vent and sends the heat out of the kitchen. I loved working in a pizza/restaurant kitchen.

Small town style smashed burgers made from 100% Nebraska raised beef, panini style with local baked Italian bread (Rotella's). Got this new pan from my fiancee for our anniversary this weekend...the maiden voyage tonight!

Yeah looks good and simple. Did you leave the burger grease on when you grilled the bread???

Nothing fancy! A pinch of salt and pepper mixed in, hammered the patties as thin as I could so they'd stay together and that's it. Left the grease on the pan for the final in-bun press...burger heaven baby!
