Awesome Fried Chicken....

    Ok I will have to do pictures the next time I make it, but I usually have a request for fried chicken. I do make it pretty damm good!!!

    Whatever chicken you prefer, breast, thighs etc.....
    season chicken with salt, pepper, Lawrys season salt, onion powder and a a little garlic. Let sit in fridge for a couple of hours....

    In one bowl put just plain Flour with a little salt and pepper

    in second bowl beat 1 egg and 1 cup of buttermilk

    in third bowl mix 1 1/2 cups of flour, Lawry's, and 1 tbls of Jiffy corn bread mix... ( a little less then a TBLS, if you use to much will taste gritty)

    I use a cast iron skillet, but what ever you are comfy with, fill about half way with oil and 1 heaping spoon full of shortening, (keeps oil from burning fast) and put it on a med to med high temp depending on your stove.

    Put your chicken in the flour, shake off, then roll in egg bath, then toss into last bowl. Pick up, shake off and into skillet.... As long as you don't have the pan to high the chicken should cook steady but slow and be golden brown on the outside and juicy as hell on the inside.

    It is mmmmmmmm good...

    I like to serve this with mashed potatoes, sweet corn and what I call mexican corn bread...... that will be the next post....

    off topic a bit.......at my x girlfriends one time.....i was gonna eat dinner with them.....her mom was frying some chicken. she came in the living room and asked my "hey Will, do you like breasts or thighs??".....................all i could do was sit there and roll on the floor laughing. i reckon my mind was in the gutter then, and when she realized it. everyone was crackin up!!

    I guess that would be hard for a man to choose... hmmm between the breast or between the thighs??? What to do ;)

    exactly.....a tough choice to make. thats why i ended up saying both.:D
