Porterhouse, organic grass fed about 2 lb or 3 inches thick (which is kind of too thick). Left out at room temperature for about an hour. On super hot grill for 3 minutes rotate 90 degrees, for perfect grill marks. Flip cook for 3 more minutes. Take off grill let sit for 5-10 minutes and enjoy. If you buy really good meat you don't need any seasoning.

My favorite is a NY Strip, rubbed with minced garlic, sea salt, and peppercorns. 2 minutes each side at 600 degrees on the Weber, turn grill off and let cook for 2 more minutes each side and let sit for a couple more before cutting. Mmmmm Mmmmm Good!

You can see the difference in the meat. And you can tell the taste is more pure if that makes sense. I could tell the difference in a blind taste test I think. I will have to try that. I did just have some pretty good quality steak from our local supermarket that was butcher's cut tonight. Really good stuff, just no where near as good as organic grass fed. imo of course.

New York strip. Medium rare.

Here's my $.02 on grilling.

About an hour before grilling, rub both sides of the steak with a very generous amount of sea salt and leave it sit out, this will draw a lot of the water out of the meat. Before grilling, rinse all the salt off and pat the steak as dry as you can get it, you want the steaks to be really dry when you throw them on the grill. Grill on high (about 550 degrees) and cook them for just a few minutes a side (longer depending on the level of doneness you desire). Results are incredibly tender and juicy!
