well damn. i just discovered GRITS! (polenta)

    back to bone stock.
    i picked up a bag of polenta. i am cutting back on meat, and i am searching out new foods to try.

    i cooked up the polenta with some parm cheese and butter..topped it off with braised beet greens..DAMN!!! my wife and i shoveled it in.

    the leftovers are just as good!! i pan fried them. i am thinking of cubing the leftovers and deep frying it too.

    I LOVE polenta, and have it mastered.......



    Start with milk / Heavy cream in a pot....

    Bring to a boil, reduce the heat

    Whisk in the polenta (corn grits) slowly - until a creamy texture

    Add a few diced roma tomatoes ( too much can kill it )

    Add FRESH julienne'd basil

    Hand full of FRESH grated mozzarella cheese (quality cheese, not something oily)

    Mix up - add salt & pepper, leave on low heat until ready to plate :)


    It's great with Grilled fish .... also KILLER with Chicken Marsala

    *Leftover polenta is great baked in a pan, square um up, then grill the squares :)
