    damn it. i am searching out vintage american and french made chef knives. i recently got a high carbon steel japanese knife. it cuts like a surgical tool. even running it on my sharpening steel..damn..how can i explain it? it is smooth. super smooth. it makes a "swish" and "zinging" sound that is amazing. my high end german blades make a grinding sound.

    i was chopping at my buddies house and he has some old ass, forgecraft high carbon steel chef knife. crazy sharp. same deal with the steel. i just finished sharpening my high carbon butcher knife that i brutalized with a dead bull elk. i first used a japanese waterstone, then cleaned it up the the steel..!!! zing zing zing.

    i love it. i might slowly give away or sell my Wustof stuff (to my family. sister and brother have ghetto knives). my wife is so annoyed with me.

    there is a whole other word out there!

    I used to own a kitchenware store in Boston and we specialized in kitchen knives. At one point I was able to buy from Wusthof knives that were returned to them as "damaged". In many cases they were slight nicks in the edge or the last 1/8 inch at the tip was bent. I fixed them and resell at about 50% off current retail. I also have the occasional carbon steel Sabatier.     no..i wont knock an inexpensive knife. you know what is a GREAT inexpensive knife? those stamped forschner blades that every restaurant uses. great handle, damn sharp..ugly as sin..but effective.

    looks like he doenst make them like that anymore. good!! his knives are $575!!! ouch.

    I've actually been using the Miracle Blade knife set :eek: They were cheap but I've had them for 6 years now and they're still holding up great! I'm actually impressed at how sharp they've stayed over the years, especially since I have done absolutely nothing to help them along and I abuse the hell out of them. They're nothing like a high end knife, but they certainly get the job done.
