I'll go ahead and tell you how I like them best - this may be a version of what you already do but here goes: First take a fillet knife and slice the breast meat off the bone leaving two small medallions. Marinate them for a few hours in 3 parts Italian dressing to 1 part Allegro or similar marinade. (Worchestershire works if you don't have anything else) Take two medallions and between them, put a large jalepeno slice and a small slice of monterrey jack cheese. Wrap with 1/2 strip of bacon an secure with toothpick. Put on hot grill turning often till bacon looks cooked - this just takes a few minutes. One tip - I like to partially precook the bacon first in the microwave. The dove meat dries out so fast that if you leave them on the grill long enough for completely raw bacon to get crispy, the dove will be overcooked. As you know they are small- it takes a pile of them to make a meal - I usually cook them as appetizers.

i normally wrap them in bacon and cook in butter but i definanttly will try you recipe!
