    wow, i just did this for a girl last week! made spagetti from scratch. honestly... it doesnt have to be something hard at all. she'll be impressed you actually cooked for her. well thats how mine was. btw try to avoid garlic and onions.

    one week? think i am in time.

    keep it simple. boil pasta. get the water boiling, add salt to water. you can go alittle bit crazy with the salt. add pasta, stir, let it go. dont overboil onto the stovetop.

    in the meantime. big skillet..tiny bit of oil. add a pinch of chili flakes. let it get hot until you can smell the chili. add about 2 cloves of minced garlic. if you have no knife skills you can buy minced stuff, or use a garlic press. let the garlic cook, briefly. dont let it burn. add a big can of tomato puree. i like that Cello brand. stir it about. let it simmer.

    once the pasta is done. (eat a piece) you want it done but not mushy. you will be surprise that the time on the pasta instructions is pretty accurate. use tongs and put the pasta into the skillet. mix it up. if it looks dry, add some pasta cooking water.

    plate it up. grab the spegetti with tongs and lower it onto the plate. as it droops onto the plate, twist your wrist to spin the noodles attractively onto the plate. use a napkin to wipe of stray sauce splatter. details count when it comes to feeding and impressing a chick. sprinkle some chopped parley onto the noodles, grate on some parmesian cheese...crack open a bottle of wine, rip up some crusty bread...eat. take a bow.

    after you get her, make her do the cooking.

    shrimp scampi or substitute chicken for the shrimp. (when I do chicken i usually do some creole spice on it in this for a little kick).
