I make this all the time. Everyone loves it.
Lemon Sage Potatoes
1 bag red potatoes
packet of fresh sage
1 carton of chicken stock
Red potatoes, cut up into even chunks.
Bring pot of chicken stock(chicken stock pre packaged) & juice from 1 lemon to a boil. Add potatoes. Boil till tender. Drain.
Put in a bowl, add 1 tsp of lemon zest(use a grater to get the zest)(zest is the outside skin of a lemon, not the white part),Pour fresh squeezed lemon juice over potatoes from 1-2 lemons, Chop some fresh sage add to bowl. You can use basil instead of sage if you would like. Both ways are great. Salt & pepper to taste. Optional: Drizzle olive oil lightly.
If you want it more lemony, add more zest and or lemon juice.
A dab of sour cream on the side of your plate is good also. The sage, lemon, & sour cream make a great combo!
