Just curious if anyone knows if my bike ('07 Honda CBR600RR) should continue to run when the negative terminal for the battery is disconnected, kind of like my truck does?

Sounds like it's running on the battery and dies when disconnected. Maybe time to testvthe stator. Hondas are notorious for weak stators. Replaced mine on the VFR, my charging problem stopped.
Does your 600 crap out on long rides?

Just check it with a volt gauge, check the battery volts, then start the bike and check the battery with the bike running, if it is more, the charging system is working and the battery is bad, if the volts stay the same the charging system is bad.
