    I plan to cook some of the back straps and do some burgers tonight for a couple buddies. Anyone have any good recipes?

    Thanks for the recommendation!
    Thats what I have done before but with some Deer meat. It was quite tasty.

    I ended up seasoning the backstraps with some salt, pepper, onion, garlic, parsley, oregano, and a light coat of olive oil.

    Batter with egg and flour and fry it up. I like to put seasonings of choice in the flour. Just had some deer backstrap tonight. Delicious

    Here's one of my favorite ways to make venison back straps, I'm sure Elk would be just as good:

    Marinate overnight in olive oil, salt, pepper, garlic, thyme, and crushed juniper berries. Sear in a smoking hot pan on all sides while basting with butter at the same time, then finish with the pan in a hot oven until they're done. After they're done, de-glaze the pan and make a gravy with the pan drippings to put over some garlic smashed potatoes.

    Getting hungry now, think I might get some backstraps out to make this week.

    Another one of my favorites is to take a filet knife and cross slice the backstraps paper thin. Then fry it up with some onion and seasoning to make cheese steaks, using your favorite cheese and a bakery roll. Yumm

    What you just described to me should be illegal... that sounds amazing. I am now starving! I may have to do so this weekend.

    Im going to try your initial seasonings when I make the burgers this weekend too
