    Hey guys/gals,

    One of my other passions (aside from my truck), is craft beer. I have amassed a cellar of around 300 unique/rare beers to enjoy and age (like wine). I was just wondering if anyone else is on these websites or share a passion for craft beer like me!

    Ok I'm in what's your favorite beer out of all of them. You do know they really don't age like wine or whiskey does though right? I'd have to say my favorite is delirium nocturnum poured correctly and in a proper glass

    UMBcrew. True, beer doesn't age like wine/whiskey/scotch. However, you have to realize that those spirits are designed to HAVE to age for at least many many years. Beer, on the other hand, does get better with age but it really depends on the STYLE of beer. I.e. some barrel aged offerings (i.e. Three Floyds Darklord, Big Sky Ivan the Terrible) actually get better with a few years of aging, this allows the intense ABV to 'mellow' out and become more integrated. Also, a lot of lambics and sours are designed to be able to be aged for over 20 years. On the flip side, beer styles like IPAs, double IPA's, wheat beers, pale ales, or anything else 'hop heavy' should be consumed soon after bottling as the 'hoppiness' will fade after a few months of being brewed. Again, it really comes down to style and quality of brew.

    yeah i forget about the barrel aged stuff. we really arent able to get stuff like that around here. i always have to look for different beers and bourbons whenever im on vacation.

    me and a friend made a "mocktoberfest" about 3 weeks ago. followed the instructions to the T!!. steps, time, sterilization everything. but it didn't ferment :( . . . hoping to try again soon though.

    Can't really say I am as knowledgeable about the fine beverage as you are, but my new kick is trying as many craft beers as I can. I try and drink a new beer with every purchase, especially because there are more and more specialty beer bars opening up around here. I'll go to bevmo and just pick up random things to try. One of my favorites is the Hitachino, japanese white. I also like most of the stuff my ommegang. I was in Belgium last year and hit up one of the last family breweries, it was pretty bad ass. Their specialty was Lambic, wasn't really my cup of tea (beer).

    where did you get your yeast from it is possible that your yeast was dead. if you followed the rest of the instruction then im assuming there was plenty of sugar for the yeast.

    it was a kit from a craft brewery store in Raleigh, NC. all still very much in date and what not. you just squeeze the yeast from a sealed pack IIRC. he had done it with his father many times and they make great beer. so we decided to give it a try ourselves. . . .though it resulted in fail :facepalm:

    im no expert so i dont really know but if you got you kit from a small craft place i would think they would have quality yeast. unless after you got it you didnt store it properly until you brewed. just remember beer wine spirits are all kinda like engines.

    engine = fuel + air + fire = go
    beer = yeast + sugar = go

    I think Rogue makes some really good brews. I devised my own kit to make 1 gallon batches so that my failed experiments don't waste 5 gallons of beer. Currently, I am brewing porters.

    Sorry it didn't work out! It really depends on the 'kit' that you got. There are kits like "Mr. Beer" that are pretty low-quality. The yeast could have been dead due to improper storage (most likely from the distributor, not the store) conditions.

    yeah it was my first experience making it, but I know it was a good kit. his father is a beer making machine and he laid out all the steps cause we did it in his garage. . . I'll be heading back home this weekend so now you've got me all anxious to try it again. looks like I'm heading to the craft store this afternoon!

    take that yeast pack back to the store with you and just tell em hey it never fermented see what they can do for you or at least maybe explain to what happened so you can fix it

    octoberfest beers are typically a Marzen style, they are difficult to home brew because they require fermentation and 45-50ish degrees (i think) so warmer than a fridge but cooler than a basement.
