    Stones give the best edge. Lanski makes a nice ston set, and its almost fool proof.

    Holy shit when I saw you replied in this thread I expected you to describe some 3-tool, 30-volt, 27,000 rpm contraption that can sharpen 7 knives in 3.2 seconds.

    x2 on the Lansky setup. It makes it much easier to get consistently sharp knives. No more guessing at what angle to hold your knife.

    Being an old meat cutter,I would use what we call a tri stone then use a diamond steel along with a regular steel.the blade has small teeth on it and the regular steel will line up the teeth after using the tri-stone and diamond steel back to normal as possable. good luck
