Can anyone tell me the differences between open air and closed air intakes? (Power; mpg; sound etc.)

LS1-T56 swap, Z06 ported heads, cam, Titanium valves, Kevlar clutch. Now building a forged stroker (383) and all the ponies! Old setup was rod-knockin on heaven's door...
Doubtful, the truck is calibrated for a stock intake, in order to see any real gains re-calibration is necessary. And even then they will be minimal.

It mostly comes down to intake temperature, but remember the cooler the charge the more fuel it adds, so in can actually drop fuel economy in lieu of what people say, but it can add some power, its always a tradeoff.

I prefer closed boxes especially for off-roading, that have ducting from an area that doesnt get blasted with dust.
