I'm planning to go with Dakar minus a leaf in the rear to handle additional load from plate bumper, armor skids and occasional towing. Will the stock rear Baja shocks be able to accept this additional lift?

The stock 4 leafs just sag too easily with load in the bed.

FWIW, I've been driving a 2008 DCSB 4x4 Sport with Dakars and stock shocks in the rear for about a week. For DDing, it hasn't been an issue at all. OME Nitros are going in tonight, though.

    enough to go over stuff

I believe the TX baja come with the billy 5160 resis in the rear. They did great with the dakar leaf pack when I had them.
