How big of a lift can you put on the 01-04 taco 4x4 before a diff. drop is required? or is it even worth putting the drop on? I've heard both ways

Its hit or miss on the diff drop. The diff drop only changes your CV angle maybe 2*. In many cases, it causes more harm than good. Better off lifting first, then seeing if you have vibes. 3" is the max without going long travel, or a drop bracket lift.

I'm planning on maybe 2 in the front and leaving the rear alone more or less just trying to level things out

You should be just fine with no diff drop. With 2" alignment should be easilly gotten into spec.
