Did you change the switch on the parking brake? Or on the brake pedal? The two things that will turn the light on are the parking brake switch and the low brake fluid switch. Perhaps the float switch in the brake fluid reservoir is bad?

If it were me, I would look under the dash at the parking break switch and make sure it's actually getting pressed in. Then, pop the hood, disconnect the connector going to the brake fluid reservoir switch and see if the light goes out with the park break off. If not, try jumping the two terminals inside the harness connector at the reservoir switch. I am not sure if you are opening or closing the circuit when the brake fluid gets low.

I am thinking you have a sticky float switch.
