is there a limit to how many times they can be pressed? i know once you press them that the bearings are junk, but do the hubs or knuckles get messed up in the process of pressing them out to be put in to a different truck?

With the proper sleeve, which only contacts the outer race of the bearing, you can press bearings indefinetly. When the bearing no longer needs to be pressed in(since the hub is worn), it's usually time to retire the truck.
