what kind of backsapcing and offset do i need to fit 285/70/17s on my 96 with 2.5" leveling kit?
will 2nd gen or fj rims work?

No the second gen or FJ stock rims will not work. They are 5.5" backspacing and will sit far too close to the uca. Stock backspacing on 1st gens is 4.5", so I would say something in the range of 3.75-4.0" backspacing will be best for you to fit the 285s.
