Im running 18x9 Helo Maxx 6 with 285/60/18 tires. I have about 3" lift, and am pretty sure I can fit 285/65/18's without much rubbing.
    285/60/18 = 32" 11.5 wide
    285/65/18 = 33" 11.5 wide

Icon Coil-overs, TC UCA, with Bilstein 5150 and Icon 3 leaf pack. 17" Moto Metal 951 4.5" Backspacing wrapped in 285/70/17 BFG AT's. Demello front bumper and Avid offroad sliders.
Chris I have same wheels exactly and tired except mine are 285/65/r18 and they fit quite nicely with no rubbing after trimming a little peice of the front fender.

As for the 20" wheels I would reccommend against them if you dont like the low profile look. With a tire size of 285/60 its about 32" and with a 20" rim there will be very little rubber and wont look right. Run the 18" rim it looks real nice with a 32"/33" tire. I would only go 20" with a 35" or larget tire. thats just my 2 cents. :D

Rubbing dont bother me. If I decide to go with the 285/65/18's, I will most likely re gear also.

    Hey Chris,
    if I go with 17x9 can you fit 33 x 12.5? with a 3 inch lift? I would rather have fatter than taller. I would love 32 x 12.5

The width of the tire is what causes most of the rubbing issues. Many people run a 33 10.50 tire to avoid rubbing.

You wont need to re gear. Most people dont re gear with 33's either, but I tow, and like to mod my truck, so if I get 33's, it gives me the green light to re gear. :D
Nitto, and many others I cant name off hand.
