I have 265/75/16 on my 2012 Tacoma. I'm thinking of getting 4 new discoverer stt's. if I get the front end "LEVELED" can I put 285/75/16 discoverer stt's on with no rubbing ?

A lot goes into whether tires are going to rub or not on a truck. I have a few questions for you...

Is your truck lifted / leveled at all?
Are you using stock wheels, if not, what is the offset of your current wheels?

285's will definitely be way too wide on a stock wheel. The tires will actually be 33.11 inches tall and 11.3 wide so you will definitely need some sort of lift.

Stacked spacer lift, 22x12 wheels with stretched 33's, tow mirrors, bull nuts.
I had a rough country 3"/2" leveling kit on my '09. I ran 285/75/16 Toyo MT's on some 16x8 wheels with 4.5 backspacing. They fit ok with some mild trimming and front mudflap removal for daily driving. Offroad was a different story, massive rubbage. I wouldn't do it again without a true 3" lift, cab mount chop, and quite a bit of trimming. I don't recommend it. The Cooper STT is a mud tire, you might have better results with a less aggressive AT tire.

Depending on what you mean by "leveled" like a 2.5-3" lift up front but yes, you would be able to add 285's but you will have to do some minor trimming but nothing a small dremel cant fix. If your on stock wheels you will need wheel spacers to clear the upper control arms most likely.
