I just used the tire calculator and found out that I have P215/70R15 tires. But I can't seem to find off road tires in that size. Could I run 215/75R15 on my stock rims? I just have a base 5 lugger

Sure could. The 75 is just going to add a little more side wall. If you go to your local tire retailer or give them a call they will be able to tell you what sizes will work for you rim size. If you are afraid of possible rubbing, you could always have the tire shop do a test fit of the tire size you are interested in.
