2007 reg can tacoma, 2inch lift on 31's

I have a 2007 Tacoma Reg. Cab, I have a 1" inch lift in front and a 2" inch in the back i am running 16"x8.0" Dick Cepeck DC2 on 31" BFGoodrich All-Terrain. Bottom line is that I want some deep dish Fuel Mavericks on Toyo Open Country M/T. I want like a 1"-2" of offset when mounted to the truck. I want more wheel than tire if you know what i mean. What size wheel/tire set up should i get. Give me some info!
