My father in law is looking to give me some rims and tires to put on my truck. I am not sure if they will fit or not so I was hoping you all could help answer that question. I am going to put a 3" lift on my truck. The rims are 20s and the tires are 285/50R20. Will these fit under a 3" lift with no rubbing?

I think they will. They are just wider than normal. I think with 3" you should be fine.

What type of trimming might i have to do. I don't have a lot of experience with these types of things.

If you do have to trim. It will just require removing the thin plastic liner in the wheel well. I have heeard that a box cutter works great. Normally if you do rub it will be at full lock in reverse.
