OK so it has a aftermarket radiator and fan as well as hydro assist cooler, Tranny cooler and ac in front of the regular radiator.
So it is fine all around its fine with air conditioning g going it runs fine in 90 degree heat...

If I go up a really steep hill that's really long as in the 330 to big bear 600 feet to 7000 feet in a short period of time it overheats......

    Anywhere else its great...

    Now here's the kicker......

It goes from the red to back to half in 2 minutes...I stop turn it off and let it sit for a minute or two start it up and it drops back to half or so and takes a bit to go back to red on a steep hill...

So turned heater in full blast and the heater got super hot but ran it to try and eliminate any air pockets...the radiator was full and the reservoir was down....

Oil isn't milky coolant is Toyota brand .....

BUCKLE UP! It makes it harder for Aliens to pull you out of your Truck.
Is there a fan shroud on the radiator? Electric fan?

Is the fan turning the right direction?
BTW never shut down a overheated motor. Let it idle.

Could your thermostat possibly be stuck?

Yeah it hits red I turn it off no steam or loss at all....then let it sit for 2 to 3 minutes and its half or close to again....I know there's no way the block is cooling that fast makes me think there's a circulation issue...or possibly a air pocket near the temp sensor......

If thermostat was stuck it would be hot more regular.....it never leaves half even sitting in traffic...its actually a smidge over half and that's where its happy till a really steep long Incline

Do you have a scanguage or ultraguage to measure the actual temperature of the coolant?

I don't but that would be a good idea to see if in fact the rest of the system is that hot....I have one at the shop on the Xj I can snag.

Aside of that though any ideas or why it cools so fast....

Maybe the engine circulates the water too quickly on climbs because you are at a higher rpm climbing hills? That's the only reason I would still assume thermostat.
