Is there an info thread from owners that list what tire they're running, and what the tire weight is on these 255s?

I don't think there is a thread for it, but my new Toyo MT's weigh 60lbs each, load range E.

Tread depot is a helpful site for getting tie stats I.e.: http://www.treaddepot.com/tire/360460.html

I just bought my new taco last week. I love the look of this tire size, but everyone talks about trimming for a comfortable fit. Can someone describe (maybe with pictures) just what exactly you trimmed, and perhaps how (tools & technique)? Thanks!
    Or maybe there's a thread I missed?

Will do. My test yesterday was to turn steering wheel both ways and compress suspension. I only had a curb to flex on, so I could not get full compression but it appears it's going to be okay.

I have stock LCAs and SPC/LR UCAs, with extended travel Icons, and I trimmed the mudflap and the flares at the very bottom. There are probably some pics in my media folder, on my phone atm.

You can see the tire rub on the cab mount where a little rust has formed. You can also see where I trimmed the flare back about a 1/2" as I was concerned that the tire would just rip it off and damage the fender in the process.

I do not believe that I have had any rubbing since I trimmed it out of the way. I also upgraded the front coils to #700/in which reduced the tire stuffing considerably. Here is another angle that shows both the rust spot and the mud flap cutout.

Here you can see where I trimmed the mudflap away from the flare and the cab mount. I drilled a small hole and ran a zip-tie through the rear (towards truck bed) of the cab mount so that the inner edge is roughly an inch further back along the body. This keep a large portion of the salt an mud off the side of my truck. The zip-ties are about three years old at this point.

I took my flaps off and did some trimming, but my tires have gotten chewed up a bit around the outer edge:pout:

..admittedly not enough to really matter or upset me. I plan to hammer the pinch weld flat next time I have the wheels off.

Stock height represent!!!! Dominated shit at Moab with stock height on 33s, on the street all you mall-princesses will be fine!

Yes, those first gens have much different space up front, and do not have a dovetailed frame in the rear, and seem much more nimble off-road than the 2nd gens. I wouldn't trade my 2nd for a first, though I have considered picking up a first in addition to my second, simply for the better geometry.
