Go for it. I'd be curious to hear your results. I don't see why the tube would work but the tray/maze doesn't, but that's the way it is...

Dust works better in the tray.

OK so the next time I smoke I'll grind my pellets into dust and give it a go. I really wanna use the tray. If that doesn't work I'll sell it and buy a tube to try. Thanks guys

Did a fatty and some ribs yesterday. Fatty stuffed with onion, bell pepper, pastrami, and cheese. Bacon weave. Smoke with apple wood.

Intrigued by this buckboard bacon. Any further information you'd be willing to share?

It's bacon made from pork shoulder instead of the belly, so you get the great bacon flavor with much less grease. Plenty of recipes out on the Internet. If you try it, be sure to watch your weights and ratios pretty closely. It's not super dangerous or anything but when you're playing with cures you start branching into more harmful chemicals that you can't just pour on by feel.

I apologize in advance for the dumb question, but as I don't know anybody who smokes.. how much smoke is being released during the process? I live in a condo and in an attached unit to my neighbors, I have bedroom windows on both sides of me. Is using a smoker going to smoke my neighbors houses out, or is it something I could realistically do without pissing someone off?

At first, a lot. Once it dies down, it's not horrible. You'd definitely be better off with an electric smoker IMO, given your space.

Too poor to list anything interesting.
Initially getting everything started, possibly. But when you're rolling, you don't get as much smoke as you might think. Have you talked to them about it? Maybe see how much is too much.

Great question. When I'm getting mine going I almost always expect the fire department to show up as the lump is firing up :D After its up and running the smoke shouldn't be overbearing otherwise your food won't taste good so not a huge impact. It also depends on what type of smoker you're using. I have a side fire box not an electric (should produce less) so that impacts it as well.

If I was you I would be worried with having other's windows that close while smoking. For me, well it's my backyard and I'm filling the air with tasty animal aromas so I think I'm doing them a favor!

They're cool neighbors but hours of smoke may change their attitude.

So electric smoker or no smoker, pretty much?

I think you could get away with a small pellet smoker. It only produces a big cloud when you start it up (first 5 min), then settles down to very little visible smoke. The real issue you'll have is feeding all the new "friends" in your complex who stop by to see what smells so good!

For a small space the Traeger Jr might be the best option. I'm not crazy about Traegers but this seems like a good deal:
