Just a guess here but I have seen oil pumps missing the pick up tube for engines in the past . Thats the tube that sits in the lower part of the engine oil pan . Might explain why the loss of pressure on incline but ok while level .
Use to see this all the time in the transmission industry .
Manufacturer installs a trans filter for a 2 wheel drive in a 4 wheel drive application .The filter cant suck up the oil to create a prime .
With this said , not sure if there is a difference between 4x4 engine oil pan and 2 wheel drive or if there is a difference between pick up tubes for the oil pumps .

To the op, i hope its just a bad sensor, but as suggested; get a video of it. Or take a tech with you on a ride and recreate the conditions to show him.
