    I wouldnt go too different when you are feeding so many people. Itd be great to experiment by yourself/a few others but id rather keep everyone happy and stuffed with so many.

    I could see that avenue of thought...but the guy that is going to be assisting/showing me stuff, is pretty seasoned...(sure, pun intended...) so our confidence is high...I just don't want to eff anything up if he gets there late.

    You want fool proof? Season them, throw them on the smoker for a 2-3 hours, take them off and wrap them in foil meat side down, put in a cup of juice (grape, apple, cranberry, whatever) in the foil with them, throw them in the over @ 200 for a couple more hours, take them out, sprinkle a little more rub on them, throw them on a low-heat grill and baste with bbq sauce for 30 minutes. Guaranteed to be awesome.

    I prefer St Louis style ribs myself. Baby Backs are trendy, and to be fair tasty, but not as much pork on the bone. You can feed 3, maybe 4 people with a rack of St. Louis...

    I've been using the recipe on the right in the pic below. It has a good heat to it but not overpowering. I tried the Fast Eddy rub (on the left) and found it a little too sweet. I think next time I'll mod the FE by cutting down on the sugar and adding a little cayenne to get a good balance of sweet and heat.

    I posted something earlier but will repost. I did a rib taste test with a few friends prior to a big BBQ. A couple racks of ribs, 1/2 of each was different than the others. I used the rub on the right side of the pic. I wrapped one using the 3-2-1 method and left another unwrapped. I also lightly sauced 1/2 of each. After everyone tried each kind the unanimous winner was unwrapped and lightly sauced (Kinders BBQsauce - 1/2 Hot and 1/2 Mild). The unwrapped had a much better taste. You could taste the hickory smoke without it being overwhelming.

    I would recommend you try the same thing prior to your big smoke if time and budget allow. Experiment with a few friends and try a few methods. I know I didn't go back to wrapping and haven't had a bad rib yet.

    Also, if space is a concern consider a rib rack. Cheap and helps. After I pulled the brisket to rest I was able to take them out and lay them out, but they would have finished just fine in the rack.

    I love this thread. It always reminds me of good things to eat. Went to the butcher today and picked up 2 slabs of baby backs and a slab of spares. Will get a helping of sticky pig dry rub tonight & get smoked up tomorrow. I probably won't wrap them. Just 4-6 hours of low & slow.

    This:^ It always makes me want to drag out mine and throw something on it. Ribs do sound good for tomorrow. But I guess I'm backwards ass but, I dont want anything sweet, or any sauce anywhere near my ribs. I offer it on the side for those that must have it.

    Start with simple rubs/seasoning(salt,pepper, paprika, brown sugar and garlic powder?) and add your choices from there. I always try something different when it's just my family but go back to a tried and true recipe when entertaining. 3-2-1 method has always worked for me adding butter and more of my rub seasoning during the wrapped session. Pour a beer and have fun! I've made ribs that I thought were good but if I were taste them now I'd probably wouldn't enjoy them as much.

    Took a slab of babybacks to a friend, and the other was gone before I could take a photo, but here are some of the spares. These babybacks were really meaty and well worth the $1/lb extra over the spares. Even the wife liked the babybacks, and she never likes ribs.

    first attempt at baby backs, great success. 3-2-1 method, everglades rub. under the foil wrap i used brown sugar, honey, and butter. came out very good.
